Eating at the beach is no easy feat. Between the sand, sun, heat, and all of the other supplies you have to lug with you, it may seem easier to just grab a burger and fries at the boardwalk than to pack a healthy meal. But if you plan ahead, it’s totally possible to bring an inventive, no-fuss meal that will satisfy the whole crew and won’t give you a major headache.
Before you get going, simplify your picnic supply stockpile by combining as many items as you can. We’re talking sporks and plastic containers with built-in dividers. In addition to bringing drinks in thermoses to keep them cool, you can also partially freeze water bottles to prolong the life of your H2O. Next, consider bringing a package of wet wipes for a quick and easy post-meal cleanup. If you opt for food items that don’t require paper plates, there’s even less to worry about! Here are some foolproof favorites:
Jar Salad
This is the perfect option for picky eaters, as the salads can be totally customized to suit each person’s taste. Take a few Ball or mason jars and fill them with the fixins of your choosing, and don’t be afraid to get adventurous with it. For example, if you have a sweet tooth, make it a yogurt or pudding parfait with granola, strawberries, or even some whipped cream for good measure.
Fruit Kabobs
These refreshing treats are almost as simple to make as they are to eat. Simply slice up your favorite fruits into bite-sized chunks (pineapple, watermelon, strawberries, and cantaloupe work best) and load them onto some skewers for a quick (and cute) snack.
Antipasti Loaf
Looking for something heartier to round out your picnic lunch? Cut off the top of a round loaf of your favorite bread, and hollow out the inside. Then, layer meats (like salami, ham, and prosciutto) and cheeses (try provolone, swiss, or sliced parmesan) inside the crust. You can even add extras like artichokes or pesto if you’re feeling creative. Refrigerate the loaf overnight, and slice it into wedges for easy eating!
Bagged Trail Mix
This one’s a no-brainer, especially if you’re crunched for time but still want something nutritious and delicious to munch on in the sun. Sure, you can make your own, but you can also choose from a wide variety of fun pre-made combinations at stores like Trader Joe’s!
